Five Sails: The Vancouver Icon's Classic Caviar Service
Sitting
down at our table overlooking Coal Harbour and Stanley Park, we were ensconced
in the dramatic landscape which defines Vancouver as much as the people,
landmarks and icons which shape it. Five Sails has long been Vancouver’s home
of classical cuisine, and recently passed under the stewardship of Emad Yacoub
and the Glowbal Group. Sure to become a fixture in the Vancouver restaurant scene,
the new General Manager, Christophe Chabre, sharing his vision for the
restaurant explained, “The menu is going to be taken to the next level.”
Beginning
with an amuse bouche of lobster wonton with potato and leak soup, we
ordered our appetizers, the classic caviar service and foie
gras. Served pan-seared, the Quebec foie gras is accompanied
with truffle sauce and caramelized apple, as well as a chilled terrine with
huckleberry jelly. We had come, however, for the classic caviar service, which is
perhaps the first of many future improvements, taking Five Sails to the next
culinary level.
Formerly
featuring Nothern Divine B.C. Sturgeon roe, the new classic caviar service boasts
imported Osietra caviar from Italy. The Russian Sturgeon roe are dark in colour,
with a mild flavour which blossoms into a gentle finish expected from this traditional
delicacy. Served on ice with buckwheat blini and brioche toasts, the caviar
service is accompanied with traditional garnishes of red onion, chives, crème fraîche, grated
egg yolk and grated egg white. We highly recommend this as a classical and indulgent
way to begin an elegant dinner.
We followed
the foie gras and caviar with the honey-glazed, smoked duck breast and
almond encrusted rack of lamb and loin, long-time classics on the Five Sails
menu. Finishing our evening, we sampled the Grand Marnier Soufflé with crème
anglaise and house made rum and raison ice cream; the Luxe Lemon
Mille-Feuilles, with layers of phyllo pastry, chilled lemon cream, lemon
parfait and a berry purée; and the not to be missed Chocolate Opera Slice.
Although
revered in Vancouver’s restaurant circuit, Five Sails promises to delight patrons
with an evolving menu, crafted by the new and dynamic team at its helm. Watch
out for exciting changes to come, as this Vancouver favourite for haute
cuisine enters a new season of re-invigoration and renewal.
